Easy Fettuccine Alfredo

I had made for the first time Fettuccine Alfredo sauce from scratch yesterday and I have to say, it came out so good! Now there are so many recipes you can find online but some had more or less ingredients and I did not know which one to follow so I kind of made my own version.



What you'll need:

  • Heavy Cream- 2/3 cup 
  • Cream Cheese- 1/3 of the brick of cream cheese cut into cubes
  • Whole milk- Just a splash
  • Butter- 1 stick
  • Salt- just a pinch
  • Pepper- 1 tbs 
  • Parmesan cheese- 4 oz
  • 1 package of fettuccine pasta (or your choice if you want to change it up!)

Steps

  1. In a big pot fill the water up 2/3 the pot and bring to boil, add a little salt to the water for taste
  2. Once water is boiling, add pasta for 12 minutes (I did break mine in half so it was easier to eat) and then start step 3.
  3. In a smaller sauce pan put the cut up cream cheese, stick of butter, and heavy cream in on LOW (we do this on low as we do not want to burn the cream) add a pinch of salt and 1/2 of your pepper.
  4. Cover sauce pan and but stir occasionally. 
  5. After about 5 minutes add the splash of milk, 1/2 of the Parmesan cheese and the rest of the pepper in, still stirring occasionally to make sure the butter and cream cheese melt in properly. After 5 more minutes sauce is ready as long as everything is melted, take off heat to let thicken up. 
  6. In a mixing bowl add the rest of the cheese to the bottom, drain the pasta keeping some of the pasta water and add pasta to the bowl
  7. add sauce to the mixing bowl and mix pasta together, if sauce is too thick then add the pasta water to thin out
  8. Enjoy! (you can add chicken or other protein to the pasta by mixing it in with step 7 or on top.)
